Quick and Easy Vegetarian Chili

  1. This hearty and flavorful chili is perfect for a weeknight dinner and can be made in under 30 minutes. It’s also vegetarian, making it a great option for Meatless Monday.


1 tablespoon olive oil

1 onion,diced

1 bell pepper,diced

1 can of black beans, drained and rinsed

1 can of kidney beans, drained and rinsed

1 can of diced tomatoes

1 cup of vegetable broth

2 cloves of garlic, minced

1 tablespoon chili powder

1 teaspoon cumin Salt and pepper to taste


  1. 1: In a large pot, heat the olive oil over medium heat.
    • 2: Add the onion and bell pepper and sauté until softened, about 5 minutes.
      • 3: Add the black beans, kidney beans, diced tomatoes, vegetable broth, garlic, chili powder, cumin, salt, and pepper.
        • 4: Bring to a boil, then reduce the heat and let simmer for 15-20 minutes.
          • 5: Serve with your favorite toppings, such as shredded cheese, sour cream, and green onions.
